Head Chef
Chef Đorđe Marković leads the kitchen with an approach built around ingredients and respect for the product.
Đorđe grew up in Kučevo, a small town in eastern Serbia, in a household closely connected to land, food, and hospitality, where cooking was part of everyday life. Food was grown, prepared from scratch, and shared within the family, shaping an early, instinctive relationship with ingredients. Surrounded by home kitchens and his mother's work as a pastry chef, he developed a natural understanding of both product and process.
His work reflects a combination of early connection to food, structured development through professional kitchens, and influences shaped by time spent in Italy and on the Adriatic coast.
Karla
Restaurant Manager
Our Kaštela-born nutritionist, Karla, has been a part of our team for nine years. With experience managing both Bepa and ZOI, she has built a strong reputation, mastering everything from local konoba service to fine dining, and earning her sommelier certification along the way.
A natural multitasker, Karla is a powerhouse of patience, passion, and exceptional expertise in hospitality. Beyond her talents in the restaurant, she’s a keen plant and flower enthusiast and an animal lover—her home is a lively zoo with parrot Roko, dogs Fox and Kron, and cat Maša. If you see long red hair flying through our garden, that’s Karla in her element—on the move, and always with a warm smile.


Tomislav
Mixologist
Our mixology master, Tomo, hails from Đakovo in Slavonia, though for the past ten years, Dalmacija has become his second home. His path has been anything but ordinary—he’s a self-taught mixologist with impressive experience, from local restaurants to the prestigious Alchemist in Copenhagen, ranked among the world’s top 50 restaurants.
Tomo’s cocktail style blends ambition and minimalism, with a focus on perfectly balanced flavors. At Mokosh, he prepares all the ingredients himself in his mixology lab—from syrups to fermentations—ensuring every detail is meticulously crafted.
Having been the lead mixologist at Split’s iconic ZOI for years, Tomo now channels his passion for experimentation into creating signature drinks that go beyond expectations. If you taste a cocktail that’s perfectly crafted and beautifully presented at Mokosh, you can be sure Tomo left his mark.
Tina
Pastry Chef
Born and raised in Split, Tina has dedicated the past 20 years to the art of pastry making. She dived straight into work after finishing pastry school, and for the last eight years, she’s been delighting us with everything from fine dining desserts and wedding cakes to traditional sweets that carry a nostalgic charm.
Her passion for pastry is inherited from her mother, who was also a pastry chef, while the entire family breathes hospitality. Dedicated, passionate, and constantly learning new techniques, Tina is a shining example of creative growth.
As a mother of two teenage sons, her family is her biggest support and source of inspiration. Both sons are following in her footsteps in the hospitality field, continuing the family legacy. Tina is a true artist when it comes to cakes and dessert decoration, but she’s equally at home in her countryside kitchen, where she prepares her family’s favorite meals with love, turning every dish into a special experience.
